Quick Vegetarian fried rice & Miso soup

Everyone enjoys a bit of me-time and good food, so why not make cooking easier and more relaxing while getting a yummy meal out of your me-time.

As I enjoy very much both coding and cooking, these recipes are a part of Code & Cook series to encourage healthy balanced food, time-saving recipes and relaxing time for coders.

What To Prepare (4 portions)

Asian Fried Rice

  • 3 cups of White short grain rice
  • 2 bulbs of Green Onions
  • 2 small Carrots — diced in cubes
  • 2 cups of a Pack of frozen small veggies (peas, carrots, green beans, corn)
  • 2 eggs
  • 2 cloves of minced Garlic
  • Oil
  • Sugar, salt, smoked paprika, cayenne pepper
  • Vegetable broth (will be sharing with Miso soup recipe)
  • Soya sauce

Miso Soup

  • Organic miso paste
  • 2 leaves of Sea weed
  • 1 pack Firm tofu
  • 1 small bag Vegetable broth
  • Green onions

Asian Fried Rice & Miso Soup

  1. Wash the rice and make simple white rice (sources) in rice cooker or on stove. Chopped and prepared all vegetables — This is the longest step.
  2. Boil water and put half of the vegetable base in the boiling water pot(1). Put the other half of vegetable base in 1 cup of warm water (literally 1-cup measuring cup)
  3. Warm up a pan(2) with sufficient oil inside, put minced garlic and carrots. (wait for 3 minutes)
  4. After the rice finishes cooking, let it cool down and mix two eggs in until evenly yellow. Put 2/3 cups of mix vegetables into the pan(2) (if not thaw in advance, then wait 5 minutes). Put two tablespoons of miso soup base into the pot(1) — wait for 5 mins.
  5. Put the yellow rice into the pan and stir with the vegetables. (Be patient, wait a bit for the eggs surrounding the rice to cook for around 3mins). ;)
  6. Stir in the remaining vegetable base from the cup into the pan(2). In the pan, season to your flavor: put a tablespoon of soya sauce, 2 teaspoons of salt, 3 teaspoons of sugar, 1.5 teaspoons of smoked paprika — If you like spicy, put additional cayenne pepper.
  7. Put tofu and green onions into the miso soup pot. Stir in green onions into the pan. Wait for 5 minutes for both. And — Enjoy!!
